Vacuum frying is a simple, yet effective food-frying technology where fruit, vegetables, fish and meat are deep fried in a vacuum tank.

Basically the process is the same as with normal deep frying – the main difference is the frying temperature. Whereas normal deep frying requires high temperature (between 160-200°C), frying in vacuum can be done at low temperature (between 80-100 °C). This reduces the uptake of oil and maintains the raw material’s original color, consistency, nutrients and flavor, all without any additives or preservatives.
